Everyone’s top priority should be to stay safe during this unique holiday season. But that doesn’t mean the season can’t be fun, enjoyable and delicious, too! The National Turkey Federation has created Thanksgiving 101 as a comprehensive guide to prepare the holiday turkey in this year of COVID-19.

Just because you’re not cooking a whole turkey, doesn’t mean you have to miss out on big Thanksgiving flavor.

The secret is using a compound butter to add flavor, keep your turkey moist and deliver that crispy skin you’re looking for. And the best part is that compound butters are super simple to make and infinitely customizable.

I have provided a recipe for compound butter that you can use as is or as inspiration for your own butter blend. Following that are directions for roasting bone-in breast, thighs and legs. If substituting dry herbs for fresh herbs, use one teaspoon of dried herbs in place of one tablespoon of fresh herbs. Enjoy!
